Recipe 4: Sweet Chili Garlic Shrimp


Jen: "I love shrimp. My mom knows that, so she decided to save me some big shrimp that she bought on sale. Take a look at the size of these shrimp! I have a wonderful mom!"

Ingredients:
1 teaspoonful of oil
4-5 shell on shrimp
1 tblsp sweet chili sauce
1/2 tblsp ketchup
1/2 tblsp soysauce
a little garlic
1 tblsp green bell pepper
1 tblsp yellow onion

First, dice the vegetables. Clean the shrimp by cutting the legs (cooking the shrimp with the shell on helps the shrimp meat to be more moist and flavorful).


Then, mix the sauces in a separate bowl.


Second, add oil to a hot pan and start cooking the shrimp until partially pinkish color.



Finally, add the vegetables and sauce and stir fry until the shrimp is completely done.

Recipe 3: Egg Tomato


This is a standard Chinese dish. Actually, this dish is found in other cultures too usually with it being a little more savory than the Chinese version.

Ingredients:
2 teaspoon spoonfuls of oil
2 eggs
1 slice of bacon
2 tomatoes
1/2 teaspoon of sugar
1/3 teaspoon of salt
a little black pepper
a little *chicken powder

(*if you want to add it)

First, crack the two egg and scramble them. Next, dice the tomatoes and cut the bacon into pieces.


Second, add oil to a hot pan. Cook the eggs in the pan, with it being half cooked (so a little runny). Take out the eggs and place it aside.



Next, add a little more oil to the hot pan and add the bacon. Cook the bacon for 30 seconds, then add the tomatoes, salt, sugar, black pepper, and chicken powder. Cook these for around a minute.



Finally, add the previously half cooked eggs and cook it until the eggs are ready. You can add some chopped green onions as a garnish.

Recipe 2: Basic Fish Fry

Jen: "I must admit, I don't really cook or eat fish too much especially if the fish has bones. I'm scared of it because of the traumatizing childhood experience of getting a small fish bone stuck in my throat. But, my mom says with the right fish (fresh and with a few bones), this is a delicious dish."

Ingredients:
3-4 small whole fish (cleaned if it's freshly caught)
1 teaspoonful of oil
a little bit of flour
a few pieces of garlic
a little soy sauce

First, lightly coat the fish with flour. This helps to prevent the oil from splattering when you put the fish on the pan. Also, chop up the garlic.


Second, add oil into hot pan on high heat and place the fish onto the pan.


Then, turn the heat to low and wait until the fish turns a golden, crispy brown color, then flip. Repeat on the other side.
Finally, add some soy sauce and the chopped garlic.


It's ready to eat and it takes a matter of minutes.

Recipe 1: Squid with Oyster Mushrooms



My mom loves seafood. I think she could eat at least 20 raw oysters in one sitting. The one thing that doesn't agree with her love for seafood is the cholesterol attached to it. But, she tries her best not to eat too much of it. Because if she can't eat the food she wants, she feels that life is not as much fun.

Serving Size: 2 people

Ingredients:
1 teaspoonful of oil
a few pieces of garlic
a few pieces of ginger
1 oyster mushroom
1-2 pieces of calamari (squid) tubes
1 red bell pepper
a few pieces of napa cabbage
a little soy sauce
a little vinegar
sugar
a little *chicken powder

First, slice the oyster mushroom, red bell pepper, and squid. For the napa cabbage chop into quarters (pieces that are easily eaten).




Second, add oil into hot pan and cook ginger and garlic for around 1 minute (to release the flavors of the ginger and garlic).



Then, add the sliced oyster mushroom, red bell pepper, and napa to the pan. After, add soy sauce, sugar, and vinegar. Add according to your taste e.g. if you want it to be sour, add more vinegar. Stir fry these ingredients together for 3-4 minutes, add a little water to keep the vegetables moist.





Finally, add the squid to the pan and stir fry for another 3-4 minutes (or until cooked). You can add cornstarch (that is mixed with the water) to make this sauce thicker and less watery.

Hafa Adai! Good Morning from Guam!

Hi All,

If you know my mom, you know that she loves cooking and talking about food. She's not professionally trained and her food is quite simple, but wow does it taste good! Most people love their moms' cooking and are biased in saying "my mom's food is the best" and for me, I do say that too. But, when my friends say that about my mom's food, you know it's really good.

The Cooking Adventure:
I'm not like my mom in the aspect of cooking. I'd rather someone else cook or I like to go out to eat. I don't have the patience for cooking like she does. However, I'm moving soon to a place where I'll have to cook. So, I'm here on Guam for around 3 weeks, to spend time with her and to learn to make her food the way she makes it: simple and easy.

To help me remember, I thought I would start this blog and share it with my friends.
