Recipe 1: Squid with Oyster Mushrooms



My mom loves seafood. I think she could eat at least 20 raw oysters in one sitting. The one thing that doesn't agree with her love for seafood is the cholesterol attached to it. But, she tries her best not to eat too much of it. Because if she can't eat the food she wants, she feels that life is not as much fun.

Serving Size: 2 people

Ingredients:
1 teaspoonful of oil
a few pieces of garlic
a few pieces of ginger
1 oyster mushroom
1-2 pieces of calamari (squid) tubes
1 red bell pepper
a few pieces of napa cabbage
a little soy sauce
a little vinegar
sugar
a little *chicken powder

First, slice the oyster mushroom, red bell pepper, and squid. For the napa cabbage chop into quarters (pieces that are easily eaten).




Second, add oil into hot pan and cook ginger and garlic for around 1 minute (to release the flavors of the ginger and garlic).



Then, add the sliced oyster mushroom, red bell pepper, and napa to the pan. After, add soy sauce, sugar, and vinegar. Add according to your taste e.g. if you want it to be sour, add more vinegar. Stir fry these ingredients together for 3-4 minutes, add a little water to keep the vegetables moist.





Finally, add the squid to the pan and stir fry for another 3-4 minutes (or until cooked). You can add cornstarch (that is mixed with the water) to make this sauce thicker and less watery.
